Vegan raspberry and pistachio brownie
While some may seem unusual, these ingredients can all be found at your local supermarket. By using dairy free chocolate, almond milk and coconut oil this recipe is vegan, but if you don’t want a vegan version, you could substitute the coconut oil for melted butter and the almond milk for normal milk. Spelt is an ancient grain that belongs to the wheat family. It is easy to digest and low in gluten, but spelt flour can also be substituted for plain flour. Coconut sugar has a low GI range, but it can be replaced with brown sugar if you’d prefer. And a scraped vanilla bean pod or vanilla essence would also work in place of the vanilla powder.

  • 150g spelt flour
  • 4 teaspoons cocoa powder
  • 160g coconut sugar
  • ½ teaspoon salt
  • 1 teaspoon vanilla powder
  • 150g dairy-free dark chocolate
  • ½ cup coconut oil (melted)
  • 230ml almond milk (or rice or oat milk)
  • 100g crushed pistachios
  • 150g raspberries

Preheat oven to 180C. Grease a brownie tin with a small amount of coconut oil and then line with baking paper.
In a double-boiler (make sure the bowl is not touching the water) melt the chocolate.
Sieve the flour and cocoa into a bowl, stir in the salt and vanilla. Add the melted chocolate, oil and milk and stir until all ingredients are combined. Pour the mixture into the prepared tin and sprinkle top with the crushed pistachios and raspberries.
Bake for approximately 15 minutes. Leave to cool before slicing into squares.
